B.R.E.R.A. Kitchen

Italian chef Franco Maddalozzo has 30 years of culinary experience from around the world, and he’s brought a little from every one of his stops to our B.R.E.R.A. Kitchen restaurant. The restaurant menu showcases a fusion of Italian, Mexican, Mediterranean and Asian flavors to tempt all palates with a variety of eccentric delights.

Chef Maddalozzo studied at the Institute Alberghiero di Trieste in Italy, which was the beginning of a long journey through countries like England, Scotland, France, Indonesia, Thailand, Germany and Mexico. He has worked for world-class culinary destinations like Hyde Park, Mandarin Oriental, Grosvenor House, Le Meridien, Four Seasons (London, England), Skibo Castle (Inverness, Scotland), Forte Hotel Village Resort (Sardinia, Italy), Hotel Eden, Palazzo Della Fonte (Rome, Italy), Piazza Atenee (Paris, France), Nusa Dua (Bali, Indonesia), The Mandarin, Peninsula (Bangkok, Thailand), Diamond Cliff (Phuket, Thailand) and Hadlon Kempinsky (Berlin , Germany).
